Matcha & Coconut Overnight Bircher from The Barefoot Housewife


Serves 2-4

Equipment

  • Mixing bowl
  • Glass or jar per person

Ingredients

  • 1 cup rolled oats
  • 2 tbsp chia seeds
  • ¾ cup shredded coconut
  • 2 tbsp Matcha Live Longer green tea powder
  • 400ml coconut water
  • ½ cup of your favourite fruit
  • 1 tbsp chopped almonds, macadamias or other nuts

Instructions

1. Place your oats, chia seeds, coconut, Matcha and coconut water in a mixing bowl. Stir until thoroughly combined.
2. Portion out the mixture into your glasses or jars and leave in the fridge overnight to set.
3. In the morning, take out of the fridge, top with your choice of fruit and nuts and enjoy!
